From a Spanish winemaking family with deep roots, Andrés Blanchard Perez is one busy guy. In addition to making Cava, he partnered with Javier Catena and started Bodega Cuarto Dominio in 2009. He also produces white wines in Argentina at Blanchard y Lurton. Made from organically grown grapes, this Cava Brut is a single vineyard selection of 33% Macabeo, 33% Xarel-lo, and 34% Parellada. Light yellow and with tiny, tiny bubbles, it has a fresh aroma of green apple and yeastiness. Medium bodied with delicate citrus and baked bread flavors, it ends on a crisp note. Overall, charming and versatile.
