A consistently excellent producer that makes traditionally-styled wines from excellent vineyard sites, Cavallotto succeeded in 2016 to the surprise of — I’d guess — nobody. This is a rather ripe and rich expression for the growing season, but the wine remains shapely and stylish, with a lovely bouquet and set of flavors interweaving spice notes, primary fruit, subtle oak and savory undertones. A beautiful wine that comes off as complete and convincing.
