Chilean Pedro Ximénez is not a variety seen frequently on U.S. wine lists, and it is why this wine immediately piqued my interest. Sourced from a single vineyard, Colectivo Mutante’s PX#1 shows notes of melon, mango, citrus, and a slight grassy note. On the palate the wine has a pleasant, oily texture and decent acidity. It is straightforward, easy drinking, and would be at home on warm summer day by the pool or next to a fresh ceviche.
