This wine is offered by the fifth generation of the Vic family which owns vineyards in the village of Vias located a few miles in from the Mediterranean coast. The soils are classified as volcanic and the Sauvignon Blanc vines are sustainably farmed and are well over 25 years old. For this 2023, the fermentation was by achieved by ambient yeasts and was entirely in stainless steel tanks. In the glass the wine is a light yellow with hints of green. With airing it opens to offer aromas of lemon zest with stone fruit. Over time it also showed an intriguing flinty, mineral aroma. Medium-bodied, it has similar flavors and finishes on a crisp citrus note. It was a surprise to encounter a Sauvignon Blanc from the Languedoc-Roussillon region, and this wine was a most pleasant surprise.
