This entry-level Chenin from DeMorgenzon (an excellent producer) is fermented entirely in stainless steel, though it rests on its lees for a minimum of four months, and a portion of the wine goes through elevage in barrels. It performs very well in the glass, showing fine freshness in both fruit and acidity, but also good substance and length. Extremely versatile with food, and a strong candidate for by-the-glass restaurant use.
