When it comes to Cava these days, the competition is keen, and wine lovers are graced with a host of wonderful choices. This Cava has quickly moved up to the top of my list. Bohigas has been bottling wine since 1870, and the company draws from 35 hectares of estate vineyards in Odena. It currently produces a wide range of sparkling wines. This Brut Reserva is a blend of native grapes: Xarel-lo, Macabeo, and Parellada. Aged for 18 months before disgorging, the wine is light yellow with lively, tiny bubbles. The aroma offers light apple fruit with some yeasty, toasty notes. The palate is smooth and lively, and the texture is surprisingly creamy. But the finish is chalky and crisp.
