One of the most important areas of viticulture in Greece, Naoussa lies in hilly Central Macedonia. This wine is light red in color, with heady, earthy aromas and mouth-gripping spicy flavors shot through with acid. Like most acidic wines (Nebbiolo for example), Xinomavro is best paired with food that has a generous fat content. I enjoyed it recently with pan-seared lamb chops that boasted a rim of fat around the edge.
