Gradis’ciutta’s Sauvignon Blanc, locally referred to simply as Sauvignon, is a rich, concentrated white wine focused on highlighting the terroir of the region. To do this, Robert Princic uses 100% temperature-controlled stainless steel to minimize the impact of winemaking on the fruit. It shows notes of red apples, pear, and peach, as well as a touch of tropical kiwi. Additionally, I found a light creaminess from lees aging and a touch of wet stone minerality. Minerality is common for the region. Importantly, the winery recommends serving this with a moderate chill — not too cold. Be sure to remove it from your fridge a good 30 minutes before drinking or, alternatively, 45 minutes of fridge time from room temperature could also work.
