Saperavi, native to Georgia, is one of the oldest wine grapes in the world. The Republic of Georgia claims 8,000 years of continuous winemaking. Saperavi is unique in that the skin and flesh are pigmented, and the 2021 Guardians Saperavi shows the intense ruby color and "inkiness" typical of this variety. The nose offers ripe black cherry and black plum fruit with savory notes of spice. This strikes a harmonious balance between the dark fruit-forward palate, baking spice undertones, uplifting acidity, and smooth tannins. It concludes with a soft, lingering finish.
