Hawk and Horse, Red Hills – Lake County (California) Rosé of Cabernet Sauvignon Sparkling Wine 2022 ($75)

I don’t drink a lot of sparkling Cabernet Sauvignon, and I don’t imagine that you do either. What to do at a winery when you are in need of a sparkler on your menu, but you only grow Bordeaux varieties? This is a roadmap for those facing such a dilemma. It’s a lovely brut Rosé, with strawberry, citrus and a dash of blueberry in the aroma and flavor profiles, with bright acidity and a lingering mixed tart berry finish. Who knew? They did — this isn’t the first vintage. Great stuff!
