Yes, they make more than just Shiraz in Australia, and I’ve tasted some good Cabernet from down under of late. This one shows rich mixed berry, a nice blend of dried herb, cedar spice and dry baker’s chocolate in aroma and flavor, with medium body and a long finish that maintains its complexity thanks to very bright acidity. It’s not often that Cabernet is described as mouth-watering, but this one got my juices flowing. Lamb lollipops with simple spice will be elevated when paired with the Pillar Box — that’s Aussie for a 19th century mail box.
