The Saperavi (Sah-pay-rah-vee) grape is the most widely planted red variety in the country of Georgia. Similar to Khareba’s white wine from the Krakhuna grape, they also eschew fermentation in qvevri, preferring stainless steel to capture the grape’s fruitiness and keep the wine fresh and bright. This ripe and robust red has attractive balancing briary notes. It would be a good choice for that hearty stew that has been simmering on the stove.
