The Satos moved to New Zealand in 2006 after quitting their jobs working at a Japanese bank. After studying viticulture and winemaking, they worked for famous local producers such as Felton Road and Mount Edward and established their own label in 2009. A departure from the usual red varieties planted in Central Otago, their La Ferme de Sato Sous Bois 2020 Cabernet Franc bursts with brambly, red and black fruit and spice — crushed strawberry, blackcurrants, raspberries, plum skin, fresh violets, cedar and sage. The palate is deep with well-integrated tannins and a surprising wick of acidity. It is fresh, enlivening, complex, and deeply satisfying.
