With this Brut Excellence Cuvee, Scharffenberger moves to the top of my shopping list for outstanding value. A blend of 60% Chardonnay, 40% Pinot Noir, the wine is aged for 24 months on the lees from the second fermentation in bottle. In the glass, the bouquet of baked apple, spice and brioche emerges quickly thanks to the lively, tiny bubble action. On the palate, it is dry and crisp with delicate apple and yeasty flavors. It finishes with a refreshing, palate cleansing note. Oysters, anyone?
