Tajinaste, Tenerife (Canary Islands, Spain) 2020

 The island of Tenerife, part of Spain’s Canary Islands, includes abundant microclimates, high-altitude vineyards, and volcanic soil, offering an environment favorable to producing pure, mineral-rich whites like this 2020 varietal Listán Blanco, the local strain of Palomino.  The wine is bright and energizing with aromas of green apple, pear, and white pepper, followed by flavors of lemon zest, tart green apple, and a hint of fennel.  The crisp mineral edge at the finish makes you want to go back to the glass over and over again.
