Xirimiri is a winery in northern Spain dedicated to producing the Basque region’s famous Txakoli. Made from the native Hondarrabi Zuri grape and a touch of Chardonnay, this classic, fizzy Txakoli is a little richer and more textured than usual, thanks to ten months of lees aging. It bursts with lime zest, succulent lemon, white grapefruit, apple, and saline notes. A streak of refreshing acidity runs straight through the medium-weight frame, providing freshness and a long, bright finish. This is an excellent alternative to the more well-known Vinho Verde.
