“Less is more” is a catchphrase that might be applied to Beaujolais Nouveau as well as to modernist architecture. Characteristically, the wines have less pigmentation than typical red wine–this one from Duboeuf, for example, is appealingly pale purplish in hue. It does have enormous and inviting fragrance, which contrasts with its rather quiet and brief fruity presence on the palate. Another characteristic of Beaujolais Nouveau that appeals to its admirers is that it has less alcohol than most red wines (12%), and it is also less costly than the average red. The secret to enjoying is Beaujolais Nouveau is to chill it slightly before pouring.
