"Pet Nat" as it’s known by purveyors of the art, is a fun and tasty expression that adds a little fizz to a wine without having to have the extra space and gear necessary to make a full fledged sparkler. This offering is one of the better examples that I’ve sampled, showing tart cherry, strawberry, bay leaf and white pepper as you’d expect from a dry rosé, and the carbonation adds a liveliness that’s very attractive, pushing a little citrus and sea spray character that makes for a perfect match with oysters or other seafood based appetizers.
