Mistingueit, Cava (Catalonia, Spain) 2013

Stored on its lees for 18 months after the second fermentation, this is a wine of quite good quality finished at 9 grams of residual sugar.  It shows notably more complexity than standard-issue Cava, and even though it has less residual sugar than is the norm for Brut bottlings, it tastes every bit as generous on account of the influence of yeast lees during the ageing process.
