This lets a winemaker have a range of choices, particularly when it comes to selecting barrels. The Castello team has opted here for a layered spice profile, and it works beautifully with the zesty character of the fruit. It’s a fine balancing act that leaves overt woody flavors out so that the fruit and spice can dance together without interruption from start to finish. Delicious!
