The layered aroma profile here starts with cherry, a mild charred oak note and well folded green pepper. It releases cherry liqueur on a slow draft, with cassis, moderate oak toast and violets. A firm grip carries the expected flavors through a long finish. Decant well near term, or age a while. Serve with seared beef, of course.
