   A serious Sauvignon Blanc, this wine is tasty on its own or as an accompaniment to shellfish, seafood, poultry, pork, pasta, vegetarian dishes — well, you get the idea.  It is low in alcohol (13%), with enticing aromatics, and is elegant and complex on the palate.  The grapes are biodynamically raised, and the wine was aged in stainless steel, concrete and oak barrels.  Jonathan Pabiot was the first producer to farm his estate organically.  This cuvée was named after the owner’s son.  By the way, if you aren’t familiar with Pouilly Fumé, it is the appellation name for this elite sub-region’s Sauvignon Blanc.
