Massimago’s “Profasio” shows the richer side of Valpolicella, with good extraction and ripe flavors of cherry, strawberry, vanilla and fall spice. There is plenty of crunch to this wine, with the fruit showing real freshness, and the acidity keeps things zesty and lets the regional herb character speak without it taking away from the fruit profile. The bright finish keeps you interested – more so alongside a braised trout or a pork tenderloin.
