 Made entirely from their estate-grown Pinot Noir, Iris’ brilliant bubbly displays the barest copper-colored hue.  A fabulous array of red fruit nuances — wild strawberries, raspberries, and the like — are supported by a strict spine of acidity that keeps it fresh and you coming back for more.  Perfect as an aperitif, this Blanc de Noirs has enough complexity and power to cut through most anything on the dinner plate, from sushi to grilled salmon.
