Here is a bottle that already has a track record thanks to the winery continuing to hold back portions of vintages for extended tirage and later release as such. It is all Chardonnay from one of their top vineyards, and you can count on winemaker Nate Klostermann’s love of dry bubbly to translate to your glass. This has a lightly scouring texture thanks to vibrant acidity, bright dry apple and pear notes, a dash of toast, and a long finish that will work at the table as well as for general celebratory purposes — like Wednesday.
