In the mouth the wine is lush, smooth, and round, with ripe peach and apple flavors laced with a dusting of mineral notes that linger while crisp acidity prompts you to take the next sip. Winemaker Benoit Chauveau has created this charming wine with meticulous attention to the vines in his sustainably farmed Sauvignon Blanc vineyards. The harvested ripe grapes are cool fermented at 65-66 °F and aged on lees for 6 to 8 months in stainless steel tanks.
