Mont Marçal, Cava (Catalonia, Spain) Brut Guarda 2022 ($27, The Sorting Table)

Sparkling wines are growing in popularity thanks to the continuously improving quality and availability of sparkling wines. Mont Marçal Brut Cava is a great example of a delicious, quality sparkling available in the under-$35 price range. Mont Marçal makes their Cava in the traditional method – the same process used to make Champagne – but they use a blend of Spanish varieties (Macabeo and Xarel-lo) and a French one, namely, Chardonnay. Mont Marçal’s Brut Cava comes across like a dry, spiced apple cider with extra effervescence and a wet chalk note.
