The wine’s deep golden orange color signals extended skin contact. In fact, the destemmed and crushed Roussanne grapes spent two weeks in a polyethylene egg fermenter. The new wine was pressed and aged for 18 months, half in stainless steel tanks, half oak barrels. The result is a dry, medium-bodied wine with savory peach, apple aromas and flavors with light notes of toasted nuts. It is well balanced with acidity. The tannins from the skins add a chewy texture similar to a red wine. Serve it with a pork tenderloin or grilled Haloumi cheese.
