The taste of fresh snow has always had a hint of carbon in its crystals, and some Champagnes, such as this one, reflect that same freshness. It is very rich and somewhat tightly wound – still young for the vintage – with flavors of preserved fruits and a hint of brioche, but mainly dominated by a metallic minerality. It’s lovely to let it linger on the palate.
