Bernhard Ott’s family began making wine in 1889. He took over the winery in 1993 with the aim of producing premium quality wines. He replaced wooden vats with stainless steel and began adding compost to enrich the vineyard soil. He had an eye-opening visit to Burgundy where he met with Aubert de Villaine of Domaine de La Romanée Conti which inspired him to adopt methods that minimize disturbing the soil, such as shallow tilling and Biodynamic practices. His 2021 Grüner Veltliner displays the grape’s distinctive white pepper, melon, citrus aromas and flavors and crisp acidity. Enjoy with sushi, fresh goat cheese or a Vietnamese summer roll.
