The label on this fresh Pet-Nat calls it “frizzantino baldanzoso,” or bold bubbly, and it delivers on the promise with a yeasty, fresh presentation. Stony minerality offsets Sorrento lemon flavors and a lightly scouring texture leaves a long tart lemon impression. Some Pet-Nats can be funky, but there is nothing but purity of aroma and flavor here. Well done!
