Darom comes to us from Israel’s southern wine country. The boundaries of this terroir include high altitude vineyards located in the regions of Mizpe Ramn and Ramat Arad. While the Yatir Winery was founded some 20 years ago, Darom by Yatir is a new offspring of the original estate. The vineyards are located just outside Israel’s Yatir Forest, a man-made forest in the midst of a semi-arid region at the southern tip of the Judean Hills. The Australian trained winemaker is Eran Goldwasser. The wine was fermented in stainless steel vats before being matured for four months in concrete vats. This fresh, clean and quiet Sauvignon Blanc offers tasty relief from summer heat.
