This is another producer who crafts excellent bubbly, though one should keep in mind the vintages blended into any particular release, as they can vary as a result. This particular NV, a blend of Pinot Noir and Chardonnay (with over 7 grams of acidity per liter, 4.3 grams of residual sugar and 12.34% alcohol, aged over two years before disgorgement) was excellent, with tangy kiwi and grapefruit notes lending plenty of verve. This is lots of fun to drink, and it would be perfect for freshly-shucked oysters.
