This special part of the Ferrari line features fermentation in Slovenian oak vats that are untoasted. The wine is held on the lees in the wood vats, allowing some micro-oxygenation which produces a classic nutty character, with a note of marzipan joining the apple and citrus mix. Owner Marcelo Lunelli calls this a wine to eat — very deep and complex. It’s an Extra Brut, with only 2 grams /liter dosage.
