My first tasting note was, “Electric!” This has a golden-yellow color and is brimming with concentrated aromas and flavors of grapefruit, pineapple, and Meyer lemon. There is a touch of lime zest and apricot supported by crisp acidity. The flavors linger in the mouth. It is exciting and delicious now, but its acidity will allow it to develop beautifully over time with proper storage. Fillaboa It is the only winery in Galicia that belongs to Grandes Pagos de España, Great Wine Estates of Spain. The “Vino de Pago” designation was established in 2003. The requirements include the Pago being owned by the producer located within a registered DO, and one that demonstrates unique characteristics worthy of the status.
