A touch of new oak and a touch of malolactic fermentation add complexity and depth in both aroma and flavor profiles. Lightly toasted French oak puncheons impart a touch of creamy texture to the palate opening, and they round of the acidity a tiny bit, letting all the glorious peach and citrus speak with a clear voice and finish crisply while getting soft vanilla added to the floral nose. There’s a ton of interest here, and I’m excited to see how this ages. Winemaker Patrick Muran is following the idea in Rias Baixas that this is a grape that is wildly versatile when handled with care.
