A hybrid between Western and Eastern Georgia, the Orgo dry wine is made from 100% Tsolikouri (“tso-lee-ka-oo-ree”) grapes. To the eye, it is deep gold rather than amber. This wine, fermented and aged in qvevri (clay amphora), is rich, with moderate tannin from the skins. The acidity sings through the palate while the tannins provide a framework for flavors of pear, grapefruit zest, quince, and white flower. This is a small-production wine, so there isn’t a lot available. It’s worth seeking out.
