Sourcing fruit from the Sophie Vineyard in nearby Talent, the winery team set out to replicate the Loire Valley, Sancerre style. So the grapes were harvested in mid-September at 21.8 Brix and a low 3.14 pH. The wine was aged for 5 months in neutral French oak. Light straw colored, it has a stunning aroma of lime, lemongrass, flint, and wet stone. On the palate, it is vibrant but with a smooth texture. Fresh and zesty in green apple, and citrus flavors, it finishes with crisp acidity offset by a chalky, mineral aftertaste. Highly distinctive and ever so food friendly, pair it with shellfish or catch of the day.
