Fiano in Apulia, the heel of Italy’s boot, is considered a distinct variety that is not the same as the more famous Fiano of Avellino in Campania. It is rather common to find the same name for different varieties from region to region in Italy. The variety traditionally known as Fiano Aromatico here in Puglia is now more widely known as Minutolo. Whatever you call the grape, however, the “Uni” Fiano from the Produttori di Manduria is delicious! Pale gold in color, its pure peach, apricot and tropical fruit aromas are enhanced by lovely floral and herbal scents. The flavors are juicy, pure, and layered with the peach and apricot tones of the grape bolstered by the intriguing floral and herbal elements. It is a delicious and versatile choice for a wide range of seafood and fowl recipes.
