Mosel is known for its bright, acidic Rieslings but Richard Böcking is pushing the grape one step further with this Sparkling Riesling. Richard Böcking is making this wine in a traditional method, with one fermentation done before bottling and the second fermentation done in the bottle. The Riesling’s natural acidity is bright and powerful but balanced with a touch of residual sugar from the dosage – a mix of wine and sugar added to the bottle after disgorgement. This Brut is full of baked apples of all varieties, brioche, pear, and a touch of minerality. Its acidic structure makes this sparkling wine incredibly versatile – perfect to serve across multiple courses at a dinner – and a great option for a restaurant that wants an inviting sparkling wine that drinks wonderfully but is off the traditional path.
