Rtvelisi’s Saperavi is a bright wine that is long on pepper and savory character that plays well with the blackberry and bay leaf. When I taste grape varieties that I’m not familiar with, like this one from Republic of Georgia, I tend to compare them to something I know better – think cool climate Syrah, but the dark side of that expression. It will go beautifully with and herb encrusted roast chicken or a spiced duck confit.
