Denser, more herbal and less fruity than their Merlot, this wine is quintessential expression of Napa Valley Cabernet.  At this stage the tannins make it a less “friendly” wine — you don’t want a glass of it before dinner — but it’s a fabulous choice for prime rib.  There’s an ever-changing interplay between the fruit and savory components that make you want to take another sip.
