Saperavi is the most planted wine grape in the country of Georgia. It is a teinturier grape, which has red pulp, while the pulp for most red wine grapes is colorless. Not surprisingly on that basis, this single variety Saperavi has an opaque, dark, dark ruby purple color. The wine was fermented and aged in stainless steel. Black plums, blackberries, and blueberries are the theme in aromas and flavors with a light note of dark chocolate in the nose. The concentrated fruit is tight in the mouth, brightened with lively acidity finishing with firm, chalky tannins. Give it time in a decanter or the glass to open up and serve with a juicy steak.
