Winemaker Laura Orsi has created a mouthwatering wine made solely of Nero d’Avola grapes, Sicily’s most planted variety. She selects half the fruit from vines grown in clay soil at sea level for soft tannins and freshness, and half grown in sandier soil at a bit over 213 feet for acidity and concentration. The result is a light-bodied, intense wine with a medium dark ruby color and aromas and flavors of black cherry and plum with notes of fresh lemon thyme. It is lean and crisp wine with bright acidity and ripe, grainy tannins that is meant for the table with grilled or roasted meat, pasta with a rich Ragu sauce, or a sausage pizza.
