Ripasso literally means two passes, which describes a winemaking technique used in Italy’s Veneto wine region. This wine is crafted by Paolo Castagnedi at the winery that he owns with his three brothers. It contains 70% Corvina/Corinone, 20% Rondinella, plus grapes which were fermented twice. The first fermentation was with the newly harvested grapes. The second entailed a week of fermentation on pressed skins from an Amarone wine. A pretty light ruby color and delicate spicy red berry fruit that is well balanced with crisp acidity and well integrated tannins provides a silky mouthfeel and lingering finish. Enjoy it with a mushroom risotto or a grilled pork tenderloin.
