The flavor profile of this excellent example of Etna Rosso is defined by fruit notes of tart red pie cherries and cranberries, but there’s a layer of fruit sweetness that keeps this from coming off as overly tart, and a terrific undertow of saline minerality that makes this enduringly interesting sip after sip. One can only imagine how intriguing this will become when time in bottle enables it to develop savory tertiary characters, but please try to buy a second bottle of this and hold it for five years so that you can learn the answer to that question.
