This young wine will need some time to fully integrate, but it’s showing promise already, with aromas and flavors of black currant, black cherry, bright fall spice and medium plus oak toast. Winemaker David Vergari is on a quest to turn things around at Thornton, and this wine shows that things are headed in a good direction. Give it a long decant or age it for up to five years, and serve with a full flavored cut of beef — flat iron steak sounds like a good fit.
