This is a beautifully bold, almost rambunctious blend of Cabernet Sauvignon and Merlot – one that will calm nicely with some cellaring. Layered black fruit and fall spice notes ride atop complementary sweet oak toast and suggestions of cacao nibs, along with fine-grained tannins that are just beginning recede to show what’s in store for the future. I would start at 5 years and go from there – or decant four or five hours and serve now with parilla grill – what else?
