I like the balance achieved in this bottling. It’s full throttle Paso Cabernet, but it manages to hold on to some of the varietal herbal character that adds complexity and interest in the glass. Black cherry, cassis and cedar spice notes benefit from the touch of greenness, giving an attractive tension on the palate and extending the finish. I would lean toward something with a little gamey character when pairing this – a venison steak sounds about right.
